I switched my Skyrim audio and subtitles to a language I do not speak well, so for those learning a language, I have listed some of the ups and downs of playing Skyrim out of your mother tongue.
Pros
It will help you become more comfortable with the language. I can't think of any situation more comfortable than gaming, and when the dialogue is in a certain language, you are more inclined to think in that language. You will also learn some common sayings. This makes it good for people who know fundemental grammar but do not have the confidence to actually speak yet.
It teaches you some cool new vocabulary. Your average class will not teach you the words for swords, shields, potions, magic, et cetera. This might not be useful in everyday conversation but it can make the language more interesting.
It dramatically increases the immersion. You feel like a true foreigner in Skyrim, gradually learning how to better communicate with the people. Also you must put in a real effort to listen to NPC dialogue and gather the information necessary. This makes the little things more difficult but also more gratifying.
It's still the same Skyrim. You don't have to think about studying the language while playing; just assume the exact same attitude as when you play Skyrim in your mother tongue. In fact, that makes it easier.
It is language immersion (no translations but instead attempting to think in the given language), but it's very low-stress immersion. There is no risk of embarrassing yourself or offending someone. It's also rather low-effort. You can absorb the vocabulary and whatnot rather passively, over a long time. Eventually certain sentence structures will become much more natural for you to use, with the proper tone and inflection.
You can customize it to your level. If you need the help of subtitles in your mother language, there is a way to do that (video later). If you need subtitles in the language that is being spoken, there is simply an in-game option for that. And when you are advanced enough you may simply remove the subtitles and try to hear what is being spoken.
Cons
You should not do this if you are a very new Skyrim player, or if you do not have a basic grasp of the language. You should be comfortable enough in both the game and the language in order to know what is going on. Otherwise it will be too confusing to make any kind of progress.
Some of the phrases and honorifics used in Skyrim may be considered outdated, unsuitable, or just plain weird in real life. The way people talk in Skyrim is supposed to sound a bit archaic. Therefore you shouldn't be too quick to use a phrase that you learned in Skyrim. Overall make sure that the phrase you learned is polite or formal enough. Talking strange and old-timey is forgivable, but offending people isn't. I'm using the French version and all NPCs except dragons use the formal way of addressing people, so that's not a big issue, but I can't speak for the other languages.
Skyrim is a supplement, not a substitute for language classes. It has helped me a great deal, but if Skyrim is your only tool, you will talk very funny. Skyrim is also not a substitute for real language immersion. To speak like an expert you need to either spend time in the country, or find a native speaker to talk with.
Skyrim might not be available in the language you are trying to learn. It might not be in your native language for that matter.

How to change Skyrim's language
In your Steam library, right click the game, open properties and select Language. Choose the language from the drop-down. It will take maybe 45 minutes to download the audio files.
